1/2 c. butter, softened to room temperature
1 c. all purpose flour
1/2 c. chopped pecans or walnuts
8 oz. cream cheese, softened to room temperature
1 c. powdered sugar
12 oz. Cool Whip, divided
3 c. milk
2 small packages instant lemon pudding

Directions:

Blend margarine, flour and nuts together; press into bottom of a 9 x 13 pan. Bake at 375 for 15 minutes. Let cool completely.
Beat together cream cheese and powdered sugar; blend in 8 oz. of the Cool Whip. Spread over cooled crust.
Mix pudding and milk at low speed with electric mixer for 1 minute. Carefully pour over 2nd layer. Refrigerate. When pudding is set up, top with remaining 4 oz. Cool Whip.

A favorite variation that Greg likes a lot is to substitute vanilla pudding for the lemon, and add a layer of fresh berries (blueberries, strawberries, raspberries) between the cream cheese and the pudding layers.
