1 chuck roast
1 medium onion, chopped
3-4 large carrots or petite carrot equivalent, sliced on diagonal
4-5 large potatoes, peeled and diced
2-3 celery ribs, sliced on diagonal
season salt and pepper
2-3 T. vegetable oil

Directions:
Directions:
Pour handful of flour into plastic bag (old bread bag or vegetable bag). Add generous amount of salt and pepper.
Add roast to bag and twist to close then toss roast until well covered with flour. In large pot with heated oil brown meat on all sides. Add 1/2-1 cup of water and cover and cook slowly for about 2 1/2 hours. Add vegetables and a little more water if necessary and cook and additional 45 minutes or until veggies are tender.
Can also be made in a crock pot. Cook on low 5-6 hours.
