1 lb. medium or large shrimp, peeled and deveined if desired
1 onion, finely diced
1 cup celery, finely chopped
1 bell pepper, finely diced
2 T. minced garlic
1 large can diced tomatoes
3 T butter
1/2 - 1 tsp. red pepper
2-3 bay leaves
salt to taste
1 teaspoon sugar
3-4 cups, hot cooked rice

Directions:
Directions:
1. Saute onions, celery, bell pepper, and garlic in butter in large skillet. Cook until tender.
2. Add tomatoes, red pepper, bay leaves, sugar and salt and simmer for about 20-25 minutes.
3. Add shrimp and continue cooking just until shrimp turn pink. DON'T overcook!
4. Serve over hot rice.
