Taffy Apple Salad Recipe

4 c. Granny Smith Apples cut up and peeled
1 c. dry roasted unsalted peanuts
1 10 oz can crushed pineapple
1 4 oz. container cool whip
c. sugar
1 Tbsp sugar
1 Tbsp flour
1 Tbsp apple cider vinegar
1 egg

Drain pineapple, save juice, cut up apple and put in pineapple juice.
In double boiler mix together, sugar, flour,vinegar and egg. Cook on medium heat until pudding like texture. (about 20 minutes) Stir occasionally. Cool. When cool,mix in cool whip-drain apples. Combine cool whip mixture with pineapple, peanuts and apple.
Refrigerate until ready to use.

Note: 2 large apples=2 cups
