Turkey-Italian Stuffed Peppers Recipe

4 green bell peppers (remove seeds and tops)
1 T. olive oil
⅓ c. onion, finely chopped
3 garlic cloves, minced
¼ c. green onion, finely chopped
2 T. green peppers, minced (use tops)
1lb. ground turkey
½ (14.5 oz,) can diced tomatoes (¼ c. of liquid reserved)
1 T. parsley
1½ tsp. Italian seasoning
1 tsp. seasoned salt
¼ c. pizza sauce
¼ c. pre-shredded mozzarella cheese
¼ c. shredded Monterey jack cheese

Preheat oven to 375º
Saute onion and garlic in olive oil until onion is soft.
Add green onions and minced green pepper and saute for about 5 min. Set aside.
Brown the ground turkey and cook through.
Add the onion, garlic and green pepper mixture.
Add diced tomatoes, parsley, Italian seasoning and season salt. Mix well and cook 5 more min.
Stuff mixture into hollow green peppers.
Pour reserved tomato juice in baking dish and place green peppers in dish.
Top each stuffed pepper with a T. of pizza sauce.
Mound each pepper with the cheeses.
Bake in a 375º oven for 20 min. or until cheese is golden brown.
