butter or olive oil
salt and pepper
other spices or seasonings optional
parchment paper

Preheat oven to 400
Rub a foil-lined pan and one side of parchment paper with butter or olive oil. (Paper should be cut slightly larger than the dimension of the pan). This prevents the chicken from sticking.
Pat the chicken dry and rub with a little butter or olive oil, if desired.
Sprinkle with salt and pepper and any other seasonings.
Place the chicken in the baking dish spaced slightly apart.
Lay the parchment paper butter-side down, over the chicken. Tuck the edges into the pan and press the parchment down so that it's snug around the chicken. The chicken breasts should be completely covered with the parchment. This keeps the moisture in.
Bake until the chicken is 165 on an instant- read thermometer. Start checking chicken after 20 min. Cooking time is usually 30-40 min., but smaller pieces will be done sooner.
