2-4 lb. eye of round roast

Directions:
Directions:
Preheat oven to 500
Season roast with salt and pepper.
Place on rack in shallow roasting pan. Do not add water or cover.
Place roast in preheated oven and immediately lower temperature to 475 .
Roast for 7 min. per lb.
Turn off oven and let roast sit in oven for 2 hours. DO NOT OPEN DOOR during this time!
Remove roast and slice thinly.
