1 large potato
1 onion (finely diced)
4 cloves of garlic (minced)
3 Tbsp fresh flat-leafed parsley chopped very fine
2 28 oz cans of red kidney beans
1 28 oz can of white kidney beans
1/2 can of crushed tomatoes
chicken broth
dried oregano
ziti pasta (tubeletti)

Cook potato and let it cool down then finely dice it (put aside) sweat onions in large frying pan in some olive oil until soft then toss in garlic and potato and dried oregano. let flavours mix for a couple of minutes. Add two cans of the beans with liquid and the can of tomatoes. Bring to boil and add the parsley and the rest of the beans. In another pot bring water to boil and add pasta and cook until done and put aside for later.

I make a batch of this and reheat it up every night for like a week.

In a frying pan put tbsp olive oil heat up a clove of crushed garlic. When hot add a couple of ladles of bean mixture with a cup of chicken broth and a handful of pasta. Never put the pasta in before warming otherwise it swellsup and makes mush.Just before serving I add a littleparmesean cheese and some crushed chilli peppers.
