2 Large tomatoes chopped
4 cloves garlic, thinly sliced
2 T olive oil
tsp kosher salt
pepper
8 oz cooked and drained penne pasta
2 oz shaved parmesan cheese

Directions:
Directions:
In a large bowl, toss together the chopped tomato, sliced garlic, olive oil, salt and pepper. Set aside for 15-20 minutes to allow the flavors to blend.
Cooke the pasta to al dente in a large pot of boiling water. Drain pasta well, and toss immediately with the fresh tomato sauce. Add the cheese and mix well. Taste and adjust the seasonings with salt and pepper, if needed.
