3 T kosher Salt
1 T rosemary (fresh)
1 Lemon Zest

1 stick butter
onion

Directions:
Directions:
Mix kosher salt, rosemary and lemon zest. Put 1 T in cavity and rub the rest on the bird.

Wrap tight in plastic and put in fridge

2nd day leave in fridge uncovered so skin dries out

Add onion (Ina doesn't even peel the onion) and lemon. Brush entire bird with melted stick of butter. Tie wings to bird and legs together and cut off extra string. Bake 45 min at 425 then 1 hour at 325. Use instant read thermometer - breast at 165 and thigh at 180
