2 cups pastry flour or 1 2/3 cups flour
3 tsp baking powder
1 tsp salt
1 ½ cups white sugar
½ cup salad oil
5 egg yolks
¾ cup lukewarm water
1 tsp vanilla
½ tsp maple
½ cup walnuts, finely chopped
1 cup egg whites
½ tsp cream of tartar

Measure flour, baking powder, salt and sugar into sifter and sift into mixing bowl. Make a well in the centre and add without combining cooking oil, egg yolks, lukewarm water, vanilla, and maple. Using a wooden spoon, stir to combine, then beat until batter is smooth. Stir in very fine walnuts. Measure egg whites into a large bowl sprinkle with cream of tartar and beat until very stiff. Add batter to beaten egg whites, about ¼ at a time, folding gently to combine after each addition. Turn into ungreased tube pan. Bake for 2 hours at 325ª, turn cake upside down.

3 cups icing sugar, sifted
2 egg yolks
3 tbsp cream
1 tsp vanilla

Cream butter gradually. Add about 1 cup icing sugar and add egg yolks. Beat. Add remaining icing sugar, alternating with cream. Beat in vanilla and maple.
