Crust:
lb soft, chewy coconut macaroons (broken into 1" pieces) - 1 cup reserved (see Coconut Macaroons recipe)

Filling:
4 large eggs (separated - reserve whites)
1 cup sugar (divided)
cup fresh lemon juice
1 tsp lemon zest
1 cup macaroon pieces (reserved from crust)
Tsp cream of tartar
1 cup whipping cream

Garnish:
to taste: whipped cream or candied cherries

Use 8" springform pan

Crust: Line bottom and 1" up sides of pan - press in lightly

Filling:
1) In a small bowl beat egg yolks with cup sugar until thickened, about 5 minutes.
2) Pour into a 1 -quart saucepan. Stir in lemon juice and lemon zest. Stirring constantly, cook over very low heat until mixture thickens. Set aside to cool.
3) In a medium bowl, beat egg whites and cream of tartar until foamy. Gradually add cup sugar and beat until thick and glossy.
4) Fold beaten egg whites and reserved macaroon pieces into cooled lemon mixture.
5) Beat 1 cup whipping cream until soft peaks form and fold into lemon mixture. Carefully spoon into macaroon-lined pan.
6) Freeze at least 8 hours or until firm. Garnish with additional whipped cream and candied cherries, if desired
