pie dough for double crusted pie

Line a 9-inch pie pan with pie dough

5-6 cups of apples. (they may look like they don't fit, but they will shrink a lot, so pile 'em high
1/2 cup white or brown sugar
1/8 teas salt
1 T cornstarch
1/4 teas cinnamon
1/8 teas nutmeg
1 1/2 T butter

If apples are bland sprinkle with 1 T lemon juice 1/2 teas grated lemon rind

Cover the pie with a pricked upper crust. Bake in a 450 oven for 10 minutes. Reduce the heat to 350. Bake until done, 35-45 minutes or until golden brown.
