Mexican Fiesta Recipe

4 lbs hamburger meat
3 large onions, chopped
2 cans tomatoes
2 small cans tomato puree
4 tablespoons chili powder
3 tablespoons garlic powder

Mix together hamburger meat, onions, tomatoes, tomato puree, chili powder, garlic powder, and water. Cook until done.

Cook: 1-1/2 lbs pinto beans
Cook: bowl of rice

To serve place "Fiesta" dishes on a table and let each person make their own by layering the ingredients from the table on their own plate.

1 bowl crushed Fritos
1 bowl meat mixture
1 bowl pinto beans
1 bowl rice
1 bowl grated cheese
1 bowl sliced ripe olives
1 bowl chopped lettuce
1 bowl chopped tomato
1 bowl chopped onion
1 bowl flaked coconut
1 bowl chopped pecans
1 bowl of taco sauce

This is from the Dimmit cookbook from Nellie Pesina. She must have been a wonderful cook because she has several good recipes in the book. Try all of the ingredients as they compliments each other. It is a meal in itself. We had it on Christmas Eve.
