3 Eggs-separated
3 oz. Thick Plain Yogurt or Cottage Cheese
1/2 tsp. Monk Fruit granules
1/8 tsp Cream of Tartar
Pinch of salt

Directions:
Preheat oven to 300 F

Spray baking sheet with olive oil or cooking spray

Beat egg whites with Cream of Tartar for 3-4 minutes until they are stiff and dry peaks form. Set aside.

In a large bowl, beat cold cottage cheese/yogurt until smooth. Beat in egg YOLKS (not whites), monk fruit granules, and salt for 2 minutes until yellow.

Gently fold 1/3 of the egg WHITES into the egg yolk mixture with a spatula. Fold in the rest of the egg whites until all the fluff disappears, but careful not to deflate them.

Mound into desired sizes on a baking sheet, or in muffin tins. Bake for 30 minutes depending on the size. They should be golden brown and crispy to touch.
