6 c. zucchini
1 c. shredded carrots
1 diced onion
1 can cream of mushroom soup
1 c. sour cream or plain Greek yogurt (I use plain 'So Delicious' Coconut Yogurt)
1 pkg. stuffing mix
½ c. melted butter

Directions:
Directions:
Put zucchini, carrots, and onion in a sauce pan and heat on the stove with a minimal amount of water so it doesn't burn on the bottom. Stir often and bring to a boil, then boil 3-5 minutes. Drain when softened (not mushy).
Mix in cream of mushroom soup and sour cream/yogurt to vegetables.
Mix stuffing mix with melted butter and put ½ the mixture in a round or square (9x9") baking dish. Depending on the size of the dish, you may need two stuffing mixes, so just double the stuffing and butter for this step.
Add the vegetable mixture to the pan and then top with remaining stuffing mixture.
Bake at 350º for 30 minutes or until hot in the center. You can bake with a glass cover on the bowl to keep the stuffing from burning on top.
