1 lb ground beef
1/3 cup chopped onion
2 tbsp chili powder
1 tbsp shortening
1 tbsp Worcestershire sauce
1 can pinto beans
1 can tomatoes
1 cup cornbread batter
salt to taste

Directions:
Directions:
Saute onion in shortening until tender. Add ground beef and continue cooking until beef is brown. Add chili powder, salt, Worcestershire sauce, beans, and tomatoes. Pour cornbread batter over top. Bake in 400 oven until cornbread is brown - about 20 minutes.

I loved this as a kid. We ate a lot of casseroles growing up. We had more ground beef than anything else because Grandad Bagwell and Uncle J.A. had a Hereford ranch in Villa Grove, Colorado. Mother, Marianne, and I would drive up in the summer to stay with Grandmother and Grandad. I loved it because we got to play with Mary Lynn, Karen, and Barbara. We never got to play out in the country - we grew up in town. It wasn't until I had grandkids that I realized why Mother and Aunt Edwyna wouldn't let us stay together ALL the time. I'm sure we drove them crazy! So many wonderful memories. Back to the point of the story.... we would bring home half a beef in the trunk of the car. I know Mother and Daddy appreciated the meat for us to live on for the year, but I looked forward to playing in the barn on the saddles, on top of the cow sheds, going on picnics in the mountains, riding horses (sorry Mary Lynn), and playing Lennon Sisters paper dolls with Karen. Sweet memories!
