1 packet Rice Flour (Red packet) Product of Thailand 400g
1½ cups of Sugar
1½ tsp. instant yeast
1 tsp. sugar for yeast
½ cup of warm water for yeast
1 can Coconut cream
3 cups warm water
2 tsp. cardamom powder
½ tsp. coarsely ground cardamom
3 tbsp. coconut milk powder (Maggi)
2 tbsp. ghee

1. Add yeast to ½ cup of lukewarm water with 1 tsp. of sugar and keep aside until the yeast blooms.
It will take about 10 - 15 minutes.
2. In a blender mix rice flour, coconut cream, 2½ cups of water and cardamom powder.
3. Combine coconut milk powder with ½ cup of water and add to the mixture.
4. Next add the bloomed yeast and gently mix in the blender with the rice mixture.
5. Transfer the rice and coconut batter into a large bowl. Cover the bowl with a plastic wrap and keep it in a warm place for a few hours until the rice mixture has risen and doubled its original size. You can also keep it in the oven with the light turned on.
6. After the batter has risen add sugar and mix well.
7. Use a thick 10" non stick frying pan to cook the Mkate Mimina. If there is any batter left over you can make a smaller mkate.
8. Heat the pan on medium high heat on the stove top.
9. Preheat the oven on to 350º F.
10. Add 2 tbsp. of ghee to the frying pan and lower the heat low. Pour the mixture into the pan. Cover the frying pan and cook until you see the sides firming up and middle is drying up..
11. Once the sides are firm and the middle is dried, remove the cover and transfer the frying pan in the oven.
12. Cook for about 10 - 15 minutes in the oven and then turn the broiler / grill on.
13. Keep the oven door open and watch to ensure the top browns but does not burn. Cover the handle of the frying pan with a silver foil to prevent it from burning.
12. When the top is golden brown, remove from the oven and let it cool completely before cutting it.

Serve with a cup of chai.
