1 ½ cup sugar
½ tsp. each: cloves, cinnamon, nutmeg, ginger (more cinnamon to taste)
¼ tsp. baking powder
1 tsp. baking soda
2 eggs
1 ⅔ cup flour
½ cup oil
1 cup pumpkin

Directions:
Directions:
Combine liquid ingredients. Stir together dry ingredients and add to the first mixture. Stir until flour is moistened. Pour into greased loaf pan or muffin tins. Bake at 350º F. for 1 hour for loaf tin or until toothpick comes out clean. For muffins, bake 20 to 25 minutes.

Substitute 1 cup of cooked rhubarb for pumpkin. Use 1 tsp. cinnamon and 1/2 tsp. nutmeg and omit cloves and ginger.
