1 package active yeast
1/4 c warm water

1/2 c brown sugar
1/3 c molasses
1 tbsp shortening
1 tsp salt
2 tsp caraway seed
1/2 tsp anise

4-4-1/2 c. flour
2 c. rye flower

Directions:
Directions:
Mix warm water and yeast. Let sit for 5-10 minutes.

Mix brown sugar, molasses, shortening, salt, caraway seed, and anise together. Pour 1-1/2 c of hot water over the brown sugar mixture. When luke warm, add the yeast and beat well. Add 1 c. flour and mix well. When mixed, add 1/2 of the following, sifted: 3-3-1/2 c. all purpose flour, 2 c. rye flower. Mix and kneed. Add the remainder, mix and kneed again. Let rise. After it is risen, punch it down and let it rise a second time. Once it has risen the second time, split and turn into 2 round loaves. Let them rise again. Then bake at 375 for 25-35 minutes.
