3 cups cooked instant rice ½cup water, and ¾ cup salsa
or
one package Mexican Rice a Roni cooked as directed and ½ cup salsa

One package El Monterey burritos, frozen (any kind)
1 cup chunky salsa
8 ounces shredded cheese
3 ounce can sliced olives
¼ cup chopped green onions
sour cream

Directions:
Directions:
Preheat oven to 350º
Spray 9x11" baking pan with non-stick cooking spray. Put the rice of your choice on the bottom, arrange burritos evenly over rice mixture, and top with one cup salsa, then cheese. Bake for 40 minutes, then uncover and bake 10 to 20 minutes more. Garnish with olives, onions, sour cream and more salsa.
