4 ounces of butter
3 to 4 tbsp of flour
2 or 3 cups of milk
lots of grated cheese

On the eight day my Grandmother Martha made cheese gravy. From the time I had any memories of Salem, I remember that for breakfast my Grandmother made cheese gravy. My cousins Jane Ann, Al, Jeb and Molly as well as my brother Joseph and my sister Adair benefited from mornings of a large skillet filled with this cheese sauce that she served over toast. Seven children that were all hungry my Grandmother would make toast and tear it up with her fingers and spoon Cheese Gravy over it.

Martha would begin by placing butter in a skillet and when it was almost melted she would put in a few tablespoons of flour. She would stir in the flour until no lumps remain and the mixture was smooth. Grandmother would hold the milk carton over the skillet and say, "one, two, three." One time I asked, "How much is that?" She said about 3 cups. Pouring without measuring, this is how she cooked.

Grandmother would cut up cheese and drop into the milk mixture. She would stir and after a few minutes, it made wonderful Cheese Gravy.

Wells has always said that we should sell this recipe to Hardy's and it would make lots of money. I made it for my family but served it on biscuits. It's always a tradition for Christmas day and on cold evenings when you just want some comfort food.

Just about everyone in our greater family makes Cheese Gravy with a slight variation. I've eaten it at Aunt Nancy's and Uncle Albert's house the day after Christmas many times and have seen pictures on Facebook posted by Jeb after his wife prepared the same.
