Ingredients:  
1/2 c. vegetable oil (or 1/2 applesauce 1/2 oil)
3/4 c. white sugar or 1/2 c honey
2 eggs
1 c. milk
1/2 tsp salt
1 T baking powder
3 c. quick cooking oats
1/2 c. raisins or any fruit
Original recipe calls for brown sugar and cinnamon on top. I just use cinnamon.

Directions:

Beat together oil, sugar/honey. Mix in eggs, milk, salt, baking powder, oatmeal. Stir in fruit. Pour into lightly greased pan. (I find glass pan get a better finish).Sprinkle with cinnamon
Refrigerate overnight. Next morning preheat oven to 350. Bake 45 mins or until firm and brown.

We love this recipe I make it a lot on Saturday night to have Sunday morning. Whatever fruit or combinations of fruit in season do well. I especially like apples and blueberries and craisins.
