Lemon Cookies Recipe

1 cups granulated sugar
Zest from 3 large lemons
12 Tbsp. butter, melted
2 Tbsp lemon juice
tsp. vanilla
1 egg plus 1 egg yolk
2 cups flour
tsp. baking soda
tsp. salt

Mix granulated sugar and zest until mixed and fragrant--about 30 seconds.
Remove cup lemon sugar and set aside in small bowl.
Add butter to bowl and mix on medium speed for two minutes.
While mixing, whisk together flour, baking soda, and salt in a separate bowl.
Add vanilla, lemon juice, and eggs into butter mixture and mix until combined.
Reduce speed to low and add flour mixture in three additional, mixing just until combined.
Roll into balls, roll in sugar/zest mixture and place on parchment-lined cookie sheet.
Cook at 325 for 14-15 minutes.
