1 can black-eyed peas, drained
1 can shoe peg/super sweet corn, drained
1 large green pepper, chopped (use orange if preferred)
1 medium onion chopped
1 medium jar pimentos
2 avocados chopped

Marinade:
cup vinegar
cup vegetable oil
cup sugar
3 Tablespoons Tiger sauce (hot sauce)

Directions:
Directions:
Mix first five ingredients together in bowl (all but avocado). Prepare marinade. Pour marinade over mixture; cover and chill for 6-8 hours. Drain marinade and add avocado, stir. Serve with tortilla scoop chips. Can be served as salad too.
