3 eggs - beaten
3 Tbsp. cooking oil
cup chopped/diced ham, pork or beef
cup chopped mushrooms
3 Tbsp. soy sauce
3 Tbsp. diced green onions
4 cups cooked rice

Directions:
Directions:
In a 10 inch skillet cook beaten eggs in 1 Tbsp. oil and set aside. Add remaining oil along with meat, mushrooms, soy sauce and onions. cook for 4 minutes. Stir in cooked rice and eggs and heat through. Serve with additional soy sauce.
