Edla's Rice Pudding ingredients
1 c. rice
4 or 5 eggs
2 teaspoon salt
1 c. sugar
3 to 3 c. milk
1 cinnamon stick
1 teaspoon vanilla

Directions:
Directions:
Cook the rice in water in a double boiler with some milk and a cinnamon stick. Bring mixture to a boil and simmer 14 to 15 minutes or until water is absorbed. Beat the eggs and add the rest of the ingredients to the cooked rice. Blend well and place in a 2 to 3 quart glass casserole. Sprinkle cinnamon on top. Bake 1 to 1 hours at 325 degrees. Be careful not to over bake.

You can't have a Swedish smorgasbord without rice pudding. For Swedish meatballs, go to Ready's Meats on Johnson St. in Northeast Minneapolis for the meat mixture already to go and cook.
