Chicken-Tarragon Recipe

4 boneless chicken breasts
lb. sweet Italian sausage diced
1 small onion, chopped
1 garlic clove, minced
1 T. chopped parsley
1 c. apple juice
1 tsp. salt (optional)
1 T. tarragon

On waxed paper, coat chicken with c. flour.
In a large skillet, in 2 T. butter, cook chicken and sausage until chicken is browned on all sides.
Pour off drippings into can and discard.
In a separate skillet (small), in 2 T. butter, cook onion, garlic and parsley until tender about 5 min.
Stir in 1 T. flour until blended.
Gradually stir in apple juice and salt. Cook stirring constantly until mixture is slightly thickened.
Stir in tarragon and pour over chicken mixture. Reduce heat to low, cover and simmer 30 min. or until chicken is fork tender. Stir occasionally.
