1 c. V-8 juice
tsp. hot sauce
2 lbs. boneless skinless chicken cutlets or tenders
1 c. finely shredded sharp cheddar cheese
1 c. cornflake crumbs
1 tsp. garlic powder
tsp. each: salt, pepper, chili powder, paprika, oregano and ground cumin

Directions:

Marinate chicken in V-8 juice and hot sauce for 3 hours in the refrigerator turning chicken frequently.

Preheat oven to 350
Spray a baking sheet with non-stick cooking spray.

Drain chicken and discard marinade.
In a large plastic bag combine the remaining ingredients.
Place the chicken pieces in the bag a few at a time and shake to coat chicken.
Place chicken on baking sheet and sprinkle any remaining crumb mixture over the chicken and press to adhere.

Bake until chicken is tender and crisp, 30-45 min.
