4 c boiled squash 1 large onion 2 eggs 1 can rotel 2 wedges cornbread 1 c grated cheese ½ c. crushed seasoned croutons salt/pepper
Drain Squash and put in mixing bowl. Add sautéed onion, rotel, eggs, cornbread, cheese and salt and pepper to taste Put into greased baking dish. Bake @ 350º for 30 min. Add crushed croutons and grated cheese. Return to oven until cheese is melted.
