CREAM PUFFS:
1 cup water
½ cup butter
1 cup flour
4 eggs at room temperature

FILLING:
1 large package instant french vanilla pudding
1 ½ cup milk
1 (8 oz.) container whipping cream, whipped
¼ cup powdered sugar
1 tsp. vanilla

CHOCOLATE GLAZE:
2 oz. unsweetened baking chocolate
2 Tbsp butter
2 cups powdered sugar
Hot water

PASTRY:
Bring water and butter to boil in small saucepan over high heat
Add flour all at once, stirring constantly, until it pulls away from the edges of the pan.
Remove from heat and cool for 5 minutes.
Add eggs, one at a time, stirring them through completely.
Drop by teaspoonful on ungreased baking sheet a few inches apart (don't touch with hands).
Bake at 450º for about 10-15 minutes, or until puffed up but not dark brown.
Turn heat down to 300º and bake until golden, or about 20 minutes.
Turn oven off and leave in oven until you shake the pan and they are hard enough that they roll around.

FILLING:
Mix pudding with milk with beaters or stand mixer. It will be thick.
In a separate bowl whip cream until beginning to get stiff. Add powdered sugar and vanilla and mix well.
Mix pudding and cream mixture.

*Once cream puffs are cooled and dry, cut off tops and pull out the guts. Then you can fill with cream and put the tops back on.

CHOCOLATE GLAZE:
Melt chocolate and butter in microwave on medium heat until melted.
Add powdered sugar and enough hot water to thin.
Pour on top of cream puffs and refrigerate.

This was a recipe my mom had more than mastered when I was a child. After I got married I decided to try them and they were a dismal failure. I tried again. Failure again! This went on several times. I had numerous conversations with my mom and sister trying to get it right. I was thrilled when I finally had a batch turn out! For whatever reason, this recipe was my most difficult to triumph.
