1 cup sugar
3 eggs
1 1/3 cup flour
1 1/3 tsp baking soda
1 1/3 tsp cinnamon
1 cup oil
2 cups grated raw carrot, packed
½ tsp salt
1 1/3 tsp baking powder
1 cup slivered brazil nuts

Directions:
Directions:
Combine sugar and oil, add eggs one at a time. Beat well. Sift and add dry ingredients and blend well. Fold in carrots and nuts. Pour into a greased pan. Bake at 350º for 1 hour (45 minutes in a bundt pan). Refrigerate for ½ hour.

2 cups icing sugar
¼ cup butter
2 tsp vanilla
