1 # boneless skinless Chicken Breast
2 Cups iceburge lettuce, thinly sliced
1½ Cups red cabbage, thinly sliced
¾ Cup cucumber, julienned
2 Medium tomatoes, chopped
1 Medium Carrot, gratted
3 Green onions, chopped
¾ Cup chopped herbs, such as mint, basil and cilantro
½ Cup dry roasted peanuts, chopped

FRIERY THIA DRESSING
¼ cup plus 2 T. fresh lime juice
1 T. sesame oil
2 T. fish sauce
4 tsp. chili garlic sauce
¼ cup brown sugar
4 cloves garlic, minced
¼ cup fresh ginger, minced or grated
¼ cup water
½ tsp. salt



Directions:
Directions:
Place Chicken in a skillet with 1 inch water. Cover and simmer gently for 10 minutes or until done inside. Remove from pan, cool , and slice or shred. Chill until ready to serve. meanwhile, combine all other ingredients in a large bowl. Toss with Chicken and Dressing.

DRESSING:Whisk together all ingredients until well combined.
