2 Lb. Flank Steak, Pounded until tender
1 Red Pepper, roasted *
1 package 10 oz. fresh Spinach
2 Cloves Garlic, Chopped
1/2 tsp. garlic powder
pinch of hot pepper flakes
¼ C Parmesan Cheese

Marinade:

1/2 C soy Sauce
1/3 C Ketchup
1 C Vegetable Oil
3 Cloves garlic, chopped

Directions:

*Cut red pepper in half and take out seeds. Rub olive oil on the red pepper and grill or bake in the oven until it is soft. Saute the garlic , spinach, red pepper, remove from heat and add parmesan cheese. Pound the flank steak until it is thinner. Salt and Pepper the flank steak. Lay flank steak flat and spread the spinach mixture on the steak. Roll up into a pin wheel. I roll from long end to long end of the steak so it long and not too thick. Use toothpicks to hold together and marinate in your favorite marinade. Marinate for a few hours. Place steak on grill. Slice up so the steak looks like a pinwheel. Don’t forget to take out the toothpicks.
