2 bunches carrots
1/2 stick butter, melted
1/2 cup sugar
1 egg
1/4 cup evaporated milk
1/3 cup flour
1 1/2 tsp. cinnamon
1 1/2 tsp. baking powder

Directions:
Directions:
Peel carrots and slice into thin rings. Boil until tender and mash well. Add melted butter and sugar and beat in egg. Add milk, flour, cinnamon, and baking powder and blend well. Bake in a greased baking dish at 350 degrees for 30-50 minutes, or until a knife inserted in the center comes out clean.

Makes 8-10 servings.
