2 Tbsp Butter
2 Celery Stalks, diced
2 Carrots, diced
1 Onion, diced
1 Potato, diced
2 tsp Minced Garlic
Salt and Pepper, to taste
1/4 c Flour
2 c Chicken Broth
1 8 oz package Cream Cheese
2 c Shredded Chicken
1/2 c Peas
2 Tbsp Parsley
2 Pie Crusts
1 Egg

Directions:
Directions:
1.) Preheat oven to 350 degrees.
2.) Melt butter in a large saucepan over medium-high heat.
3.) Saute celery, carrots, onion and potatoes for 8-10 minutes, or until vegetables begin to soften.
4.) Add garlic and season with salt and pepper.
5.) Mix in flour, chicken broth and cream cheese. Let cook for 5 more minutes, stirring constantly.
6.) Fold in chicken and peas.
7.) Layer one pie crust in the bottom of cast iron skillet. Pour in mixture and roll out other pie crust on top. Use a sharp knife to cut off any excess dough hanging over the sides.
8.) Whisk egg in a small bowl and brush over the top of the pot pie.
9.) Cook for 18-20 minutes, or until the top is golden brown.
