5 to 6 cups cauliflower florets, about 1 inches in diameter (from 1 medium cauliflower)
cup extra virgin olive oil
1 Tbsp sliced garlic
2 Tbsp lemon juice
1 tsp salt
tsp black pepper
2 Tbsp grated Parmesan
Chopped chives for garnish

Directions:
Directions:
1. Preheat oven to 500.
2. Place cauliflower florets in a large roasting pan.
3. Drizzle olive oil over cauliflower and season with the garlic, lemon juice, salt, and pepper.
4. Place roasting pan in oven and cook for 15 minutes, stirring occasionally to insure even roasting.
5. Remove from oven and sprinkle with Parmesan.
6. Garnish with chopped chives and serve immediately while still warm.
