4 tilapia fillets
1 egg, beaten
2 cups cornflake crumbs
1 tsp dry mustard
½ Tbsp paprika
2 Tbsp olive oil
salt and pepoer
½ small seeded watermelon, chopped
½ green bell pepper, chopped
½ small red onion, chopped
Juice of 1 lime

Directions:
Directions:
1. In a bowl, combine watermelon, lime juice, paprika, onion, and bell pepper. Season with salt and pepper. Stir to combine and set aside.
2. In a shallow dish, combine cornflake crumbs, paprika, and dry mustard. Set mixture aside.
3. Dip each fillet into beaten egg and then coat with crumb mixture.
4. Put olive oil in a skillet and place over medium-high heat. Once oil begins to ripple, add tilapia fillets. Cook for 3 to 4 minutes per side.
5. Serve tilapia fillets with watermelon salsa on the side.
