1 tsp butter
2 eggs
1 slice tomato
1 slice Swiss or Cheddar cheese
1 tsp grated Parmesan cheese
Salt to taste

Directions:
Directions:
Preheat oven to 375. Spoon into small casserole and place in oven until butter is melted. Break eggs into a bowl, then remove casserole from oven and slide eggs carefully into casserole. Place tomato, cheese and grated cheese on top and put back into oven. Bake until whites have set. Season and serve hot.

Variation – add a bit of cooked spinach or asparagus to tomato and cheese We did each one and it was great. We also tried other veggies like broccoli or kale.
