8 inch pie shell
5 T butter
2 C chopped fresh spinach, well packed (we used 1 pkg frozen spinach sometimes)
¾ tsp. salt
¼ tsp. pepper
½ tsp. nutmeg
2 T finely minced green onions (optional)
3 eggs
½ C cream (or evaporated milk)
1 ½ C grated swiss cheese

Partially bake pie shell at 400º until it starts to color and shrink from sides (approx. 10 min). Melt 1 ½ T butter in skillet; stir in chopped spinach, ¼ tsp. salt and pinches of pepper and nutmeg. Cover and cook very slowly for 2 min until spinach has released it juices. Uncover. Raise heat, stir for 2 to 3 min until all moisture has evaporated. Set aside.

Cook onions in 2 T butter. Add spinach and stir over moderate heat for several min. Remove from heat and stir in ½ tsp. salt, 1/8 tsp pepper, and rest of nutmeg. Beat eggs and cream with fork and add to spinach mixture. Pour into pie shell. Sprinkle with cheese, dot with remaining butter and bake 25 to 30 min in 375º oven. Serves 6.
