1 1/2 c. sugar
1/2 c. oil
1/2 c. yogurt
3 eggs
1 tsp. salt
1 tsp. cinnamon
1 tsp. vanilla
1/4 tsp. baking powder
2 tsp. baking soda
2 c. flour
3/4 c. quick oats
2 c. zucchini
1 small carrot, finely grated

Cream Cheese Frosting:
8 oz. cream cheese
1/4 c. soft butter
2 tsp. Vanilla
2 1/2 c. powdered sugar
1-2 TB milk

Directions:
Directions:
Bake bars in 10"x15" greased pan 20-30 mins at 350º. Frost with frosting when bars are cooled; may sprinkle 1/2 c. chopped nuts over frosting.

These are every bit as good, if not better, than pumpkin bars! A good way to use up some of the extra zucchini from the summer garden.
