1 lb hot sausage, uncooked
8 oz cream cheese, softened to room temperature
2 cups Bisquick
1 cup cheddar cheese, shredded

OR
1 lb pork breakfast sausage (Jimmy Deans - I prefer Neese's Hot sausage)
If you don't eat pork-you can use turkey sausage
12 oz pimento cheese (or blend of cheeses)
2 + 1/4 cup of Bisquick
Dash of paprika and red pepper

Directions:
Directions:
Preheat oven to 400º
Mix all ingredients until well combined. Can use KitchenAid mixer with dough hook attachment.
Roll into 1-inch balls. Bake for 20-25 minutes, or until golden brown.

Sausage balls may be frozen uncooked. If baking frozen, add a few minutes to the baking time.
Gluten Free Bisquick can be used for those that are Celiac or eating Gluten Free.

For Pimento Cheese Sausage Balls:
Preheat oven to 375º
Add sausage, cheeses to a large mixing bowl-combine well.
Add Bisquick and spices (Knead with hands until it's all combined) into a large ball.
Scoop and roll into 1 inch balls
Place on baking sheet
Bake 15-18 minutes until they're golden brown on top.
Store in air-tight container or zip lock bag in the refrigerator for up to a week.
