This is a refreshing summer time soup, but served cold.

2 Cucumbers Seeded
3 Red Bell Peppers
8 Plum Tomatoes
2 Red Onions
6 Cloves Garlic (minced)
46 Oz. Tomato Juice
½ Cup Wine Vinegar
½ Cup Olive Oil
1 tsp. Salt
½ of a Jalapeño
Small amount of Cilantro (chopped fine) to taste

Directions:

Chop ingredients fine or use a food processor, and mix in a big bowl. Let sit over night for the best flavor, but can eat it after making. Serve cold.
