1 Tblsp olive oil
3 lbs chicken cut into 1 inch cubes
coarse salt
black pepper
1 1/2 lbs potatoes (peeled and cubed)
4 Tblsp unsalted butter
3 red bell peppers (seeded and chopped)
3 plum tomatoes
1 cup dry white wine
1 cup chicken stock/broth
pinch saffron
1 tsp orange zest
3 lbs fresh spinach

Directions:
Directions:
In a large skillet over med-high heat, heat oil
Season chicken with salt and pepper and place in skillet
Brown chicken lightly on all sides
Remove chicken from skillet to plate
Add potatoes to skillet and cook (stirring occasionally) until edges are brown (7-8 minutes)
Add peppers and tomatoes and cook one more minute
Add wine and bring to boil
Pour in stock and add saffron
Add chicken back into pan
Reduce to simmer
Cover and cook 45 minutes (until chicken is cooked and potatoes are tender)
Stir in orange zest
Bring a separate large pot of water to boil
Add spinach and cook 1-2 minutes until spinach is wilted
Drain spinach and then squeeze out excess moisture
Just before serving, melt 3 Tblsp butter in skillet over med-low heat, add spinach and toss until heated through
Divide spinach among serving bowls
Ladle stew over spinach and serve
