2 medium heads Boston lettuce [or lettuce of your choice]
½ c. light cream [probably half-and-half]
¼ t. vinegar
1 t. sugar
¼ t. salt
3 or 4 scallions

Directions:
Directions:
1. Wash, then refrigerate heads of lettuce, as soon as they come from grocer's.

2. Make this dressing right in measuring cup; To light cream in cup, add vinegar, sugar, & salt; refrigerate.

3. At mealtime, with kitchen scissors, break lettuce into bite-size pieces, right in salad bowl. Snip scallions over lettuce. Refrigerate till needed.

4. Just before serving: Toss salad with dressing.

I include this recipe, from the 1963 edition of the "Good Housekeeping Cookbook" (given to me by my great aunt, Essie Martin Chenoweth in 1973) merely for its historical interest. I love how everything is done "right in" some container, as if that is a great selling point.
