3 cups diced apples, preferably firm apples
1 cup lightly toasted nuts
lemon juice (just a couple of squeezes)
2 tsp. vanilla extract
2 cups sugar
¾ cup applesauce, preferably non-flavored
½ Cup vegetable oil
3 eggs
3 cups all purpose flour
2 tsp cinnamon
1 tsp baking soda
1 tsp salt
small grate of fresh nutmeg (a couple swipes on a zester)

Directions:
Directions:
Preheat oven to 325 degrees.
Chop apples and nuts. Combine with vanilla extract and just a squeeze or two of lemon, so the apples don’t turn brown.
In a mixer, combine sugar, applesauce, vegetable oil and eggs until very well mixed.
Sift together all the dry ingredients and add to the sugar, applesauce mixture. Combine just until incorporated.
Add apple mixture again until just combined.
Pour in greased and floured bundt cake pan.
Bake 1 hour or until a toothpick comes out clean.
Cool on wire rack for 30 minutes and then turn out and cool completely.
