French Onion Soup Recipe

4 Tblsp butter
2 Tblsp Olive Oil
2 lbs Onions (thinly sliced, about 7 cups)
1 tsp salt
3 Tblsp Flour
2 quarts Beef Stock
1 Clove Garlic
1 tsp white sugar
Parsley
Thyme
1 cup dry white wine
Splash of Cognac
French bread sliced in 1 inch thick pieces
1/4 lb Swiss Gruyere or Mozerella Cheese

Directions:
Directions:
Melt butter in large dutch oven
Add 2 Tblsp Olive Oil
Stir in Onions and salt, sugar and garlic
Cook uncovered, stirring occasionally for 20-30 minutes until onions are golden brown
Sprinkle flour over onions and cook 2-3 minutes
Remove from heat

In a separate sauce pan heat beef stock to simmering
Add wine and cognac
Add hot stock to onion mixture
Simmer, partially covered for 30-40 minutes

Place bread on cookie sheet and lightly coat both sides with olive oil
Bake at 350ºF for 15 minutes, turn and continue to bake for an additional 15 minutes

Ladle soup into oven proof bowls
Top with baked bread and cheese
Bake until cheese is melted and golde brown
