8 ounces cream cheese (room temperature)
12 ounces butter (room temperature)
3 cups all purpose flour
28 ounces fruit filling (apricot, raspberry, prune, etc)
Confectioners sugar for dusting

Preheat oven to 350º
In a large bowl, beat cream cheese with butter until light and fluffy.

Add flour, 1 cup at a time, mix well.

Wrap dough in plastic and refrigerate for 1 hour.

Roll out dough to ¼ inch thickness on silicone mat or a surface that has been dusted with equal parts confectioners sugar and granulated sugar. Granulated sugar will act as ball bearings and help to keep dough from sticking.

Cut into 2 inch squares or circles. Place ½ - 1 teaspoon filing in each square or circle. Overlap opposite corners or sides of dough after brushing lightly with a bit of beaten egg white, press together lightly.

Bake for 15 minutes (longer if baking frozen). Cool completely and dust with confectioners’ sugar.
