Banana Bread non-butter


Ingredients:

2 cups all-purpose flour
1 tsp baking soda
1/4 tsp salt
3/4 cup corn oil
3/4 c brown sugar
2 eggs beaten
2 1/3 cups banana ( four small ripen bananas ) mashed
1 tsp cinnamon
1/2 cup of dried cranberry ( optional )

Directions:

set oven temperature to 350 degrees
add baking soda, salt, cinnamon, into flour mixture
combine corn oil and brown sugar either by hand or electric beater
add beaten eggs into sugar/oil mixture
add banana into wet mixture
fold flour mixture into banana mixture
pour ingredients into greased loaf pan
bake for 60 minutes

Store ripen banana in the freezer, when you reach to 3 or 4 bananas you can bake a banana bread loaf.
Place frozen bananas on a cutting board, use paring knife to cut off both ends of banana and discard skin.
