1 ¼ to 1 ½ cup butter, divided
½ cup unsweetened cocoa powder
3 ½ cups confectioners sugar, divided
1 teaspoon vanilla
2 cups graham cracker crumbs
⅓ cup green crème de menthe (if you use the clear, color the filling)
⅓ cup semi-sweet morsels

Directions:

Combine ½ to 1 cup butter and cocoa powder in a sauce pan.(See Note.) Heat and stir until well blended. Remove from heat and add ½ cup confectioners sugar and vanilla. Stir in graham cracker crumbs. Mix well. Press into bottom of ungreased 9 by 13-inch baking pan. Chill for 1 to 2 hours.

Melt another ½ cup butter. In a small mixer bowl, combine butter and crème de menthe. At low speed beat in remaining 3 cups of confectioners sugar until smooth. Spread over the chocolate layer. Chill 1 to 2 hours.

In small saucepan combine remaining ¼ cup butter and chocolate morsels. Cook and stir over low heat until melted. Spread over mint layer. Chill 1 to 2 hours. Cut into small pieces. Store in refrigerator.

Personal Notes:
The original recipe called for an egg to be added with the sugar and vanilla. I deleted this and increased the butter to 1 cup. If you use the egg, use a pasteurized egg and ½ cup butter in the base layer. Information on making your own pasteurized eggs is in the Vegetables and Vegetarian Dishes section.
